Ingredients
1 cup Greek yogurt
1 cup pumpkin puree
1/4 cup honey or maple syrup
1/2 teaspoon vanilla extract
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
3 gelatin sheets or 1 tablespoon gelatin powder
Graham cracker crumbs (for crust, optional)
Instructions
1. Preheat the oven to 350°F (175°C). If you want a crust, press graham cracker crumbs into the bottom of a cheesecake pan.
2. In a bowl, mix Greek yogurt, pumpkin puree, honey or maple syrup, vanilla extract, and spices until smooth.
3. If using gelatin, soak it in water until it’s soft, then dissolve it in a small amount of warm water. Mix it into the pumpkin mixture.
4. Pour the mixture into the prepared pan.
5. Bake for about 25-30 minutes, or until set.
6. Allow the cheesecake to cool, then refrigerate for at least 2 hours before serving. Enjoy your healthy cheesecake!
Notes
Make sure your gelatin is fully dissolved before adding it to the mixture for a smoother texture.
If you prefer a sweeter cheesecake, feel free to adjust the amount of honey or maple syrup to your liking.
