- 2 cups rolled oats
- 1 cup unsweetened applesauce
- 2 ripe apples, diced
- 1/2 cup honey or maple syrup
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- 2 teaspoons cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan.
- In a large bowl, combine the rolled oats, diced apples, honey (or maple syrup), melted coconut oil, and vanilla extract. Mix well.
- In a separate bowl, whisk together the cinnamon, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until well combined. If using, fold in the chopped nuts.
- Pour the batter into the prepared baking pan and smooth the top.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool for a few minutes before slicing and serving.
Notes
Feel free to top the cake with Greek yogurt or a scoop of ice cream for added creaminess.
