Description

A delicious and wholesome cake made with rolled oats and apples, perfect for breakfast or a snack.

Ingredients

Scale
  • 2 cups rolled oats
  • 1 cup unsweetened applesauce
  • 2 ripe apples, diced
  • 1/2 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan.
  2. In a large bowl, combine the rolled oats, diced apples, honey (or maple syrup), melted coconut oil, and vanilla extract. Mix well.
  3. In a separate bowl, whisk together the cinnamon, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until well combined. If using, fold in the chopped nuts.
  5. Pour the batter into the prepared baking pan and smooth the top.
  6. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool for a few minutes before slicing and serving.

Notes

Feel free to top the cake with Greek yogurt or a scoop of ice cream for added creaminess.
