Ingredients

  • 1 cup water, divided
  • 3 tbsp gelatin
  • 1 cup honey
  • 1 tbsp vanilla extract
  • 1 tbsp arrowroot powder (optional)

Instructions

  1. Add ½ cup of water to a large bowl or stand mixer and sprinkle gelatin evenly over it. Let it bloom for 5 minutes.
  2. In a saucepan, combine the remaining ½ cup of water with honey, bring to a boil, then reduce heat and simmer for 5 minutes.
  3. Mix the bloomed gelatin on low speed and gradually pour in the honey mixture while the mixer runs.
  4. Add vanilla extract. Increase speed to high and beat for 8-10 minutes until thick and glossy.
  5. Pour the marshmallow fluff into a parchment-lined baking dish, spreading evenly.
  6. Let it set overnight at room temperature, then cut into squares.
  7. Toss marshmallows in arrowroot powder if desired to prevent sticking.

Notes

Store marshmallows in an airtight container at room temperature for up to two weeks. Avoid refrigeration to maintain fluffiness.
