- 1 cup water, divided
- 3 tbsp gelatin
- 1 cup honey
- 1 tbsp vanilla extract
- 1 tbsp arrowroot powder (optional)
Instructions
- Add ½ cup of water to a large bowl or stand mixer and sprinkle gelatin evenly over it. Let it bloom for 5 minutes.
- In a saucepan, combine the remaining ½ cup of water with honey, bring to a boil, then reduce heat and simmer for 5 minutes.
- Mix the bloomed gelatin on low speed and gradually pour in the honey mixture while the mixer runs.
- Add vanilla extract. Increase speed to high and beat for 8-10 minutes until thick and glossy.
- Pour the marshmallow fluff into a parchment-lined baking dish, spreading evenly.
- Let it set overnight at room temperature, then cut into squares.
- Toss marshmallows in arrowroot powder if desired to prevent sticking.

Store marshmallows in an airtight container at room temperature for up to two weeks. Avoid refrigeration to maintain fluffiness.
