Description

A zesty and wholesome lemon loaf cake made with Greek yogurt for added moisture and flavor.


Ingredients

  • 1 cup Greek yogurt
  • 1 cup sugar
  • 3 large eggs
  • 1/4 cup vegetable oil
  • 2 tablespoons lemon juice
  • Zest of 1 lemon
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, blend Greek yogurt, sugar, eggs, vegetable oil, lemon juice, and zest until smooth.
  3. In another bowl, whisk together all-purpose flour, baking powder, salt, and baking soda.
  4. Gradually add dry mixture to wet mixture, stirring gently until just combined.
  5. Pour the batter into a greased loaf pan and smooth the top.
  6. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Serve with powdered sugar, whipped cream, or ice cream for a delightful treat.
