Description

Delicious and wholesome cookies that bring the cozy flavors of carrot cake in a healthy oatmeal form.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup grated carrot
  • 1/4 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • Optional: 1/4 cup chopped nuts
  • Optional: 1/4 cup raisins

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine rolled oats, whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Whisk together until well combined.
  3. In another bowl, mix grated carrot, applesauce, honey or maple syrup, and vanilla extract until blended.
  4. Combine the wet mixture with the dry ingredients, stirring until a cookie dough forms. Optionally, add nuts and raisins.
  5. Drop spoonfuls of dough onto a parchment-lined baking sheet, spacing them apart.
  6. Bake for 12-15 minutes until edges are golden.
  7. Let cool on a baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week or freeze for up to three months.
