Ingredients

- 1 cup rolled oats
- 1/2 cup whole wheat flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup grated carrot
- 1/4 cup unsweetened applesauce
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- Optional: 1/4 cup chopped nuts
- Optional: 1/4 cup raisins
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine rolled oats, whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Whisk together until well combined.
- In another bowl, mix grated carrot, applesauce, honey or maple syrup, and vanilla extract until blended.
- Combine the wet mixture with the dry ingredients, stirring until a cookie dough forms. Optionally, add nuts and raisins.
- Drop spoonfuls of dough onto a parchment-lined baking sheet, spacing them apart.
- Bake for 12-15 minutes until edges are golden.
- Let cool on a baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to a week or freeze for up to three months.
