Description

Delightful oatmeal cookies that combine the flavors of carrot cake with wholesome ingredients, perfect for a nutritious snack or dessert.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup grated carrot
  • 1/4 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped nuts (optional)
  • 1/4 cup raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the rolled oats, whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Whisk until well combined.
  3. In another bowl, mix together the grated carrot, applesauce, honey or maple syrup, and vanilla extract until blended.
  4. Add the wet mixture to the dry ingredients and mix until everything is evenly combined. Optionally, toss in some chopped nuts and raisins for extra flavor and texture.
  5. Drop spoonfuls of the dough onto a lined baking sheet, leaving some space between each cookie.
  6. Bake for about 12-15 minutes or until the edges turn golden brown.
  7. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For longer storage, freeze the cookies in a single layer on a baking sheet, then transfer them to a zip-top freezer bag for up to 3 months.
