- 1 cup rolled oats
- 1/2 cup whole wheat flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup grated carrot
- 1/4 cup unsweetened applesauce
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup chopped nuts (optional)
- 1/4 cup raisins (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the rolled oats, whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Whisk until well combined.
- In another bowl, mix together the grated carrot, applesauce, honey or maple syrup, and vanilla extract until blended.
- Add the wet mixture to the dry ingredients and mix until everything is evenly combined. Optionally, toss in some chopped nuts and raisins for extra flavor and texture.
- Drop spoonfuls of the dough onto a lined baking sheet, leaving some space between each cookie.
- Bake for about 12-15 minutes or until the edges turn golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For longer storage, freeze the cookies in a single layer on a baking sheet, then transfer them to a zip-top freezer bag for up to 3 months.
