Description

Delicious and nutritious oatmeal cookies that combine the comforting flavors of carrot cake with wholesome ingredients.


Ingredients

  • 1 cup oats
  • 1 cup grated carrots
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the oats, grated carrots, almond flour, honey or maple syrup, melted coconut oil, cinnamon, nutmeg, baking soda, salt, and vanilla extract.
  3. Stir until the mixture is well combined.
  4. Drop spoonfuls of the cookie dough onto a lined baking sheet, spacing them about 2 inches apart.
  5. Bake in the preheated oven for 10-12 minutes or until the edges are golden.
  6. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a nut-free version, substitute almond flour with oat flour or additional oats. Store in an airtight container for up to five days.
