Description

Delicious and wholesome baked churro bites that are lightly sweetened and gluten-free, perfect for satisfying your sweet tooth without the guilt.


Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup sweetener of choice (e.g., coconut sugar, stevia)
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup unsweetened applesauce
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 cup melted coconut oil
  • Additional cinnamon and sweetener for coating

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the almond flour, coconut flour, sweetener, cinnamon, baking powder, and salt.
  3. In another bowl, mix together the applesauce, eggs, vanilla extract, and melted coconut oil.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Scoop out small portions of the dough and roll them into bite-sized balls.
  6. Place the balls onto a baking sheet lined with parchment paper.
  7. Bake for 15-20 minutes, or until lightly golden.
  8. In a bowl, mix together additional cinnamon and sweetener.
  9. Once the churro bites are cool, roll them in the cinnamon-sweetener mixture.
  10. Serve warm and enjoy!

Notes

Don’t overmix the dough for a tender texture. Adjust sweetness to your preference.
