Ingredients

- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup sweetener of choice (e.g., coconut sugar, stevia)
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup unsweetened applesauce
- 2 eggs
- 1 tsp vanilla extract
- 1/4 cup melted coconut oil
- Additional cinnamon and sweetener for coating
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the almond flour, coconut flour, sweetener, cinnamon, baking powder, and salt.
- In another bowl, mix together the applesauce, eggs, vanilla extract, and melted coconut oil.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- Scoop out small portions of the dough and roll them into bite-sized balls.
- Place the balls onto a baking sheet lined with parchment paper.
- Bake for 15-20 minutes, or until lightly golden.
- In a bowl, mix together additional cinnamon and sweetener.
- Once the churro bites are cool, roll them in the cinnamon-sweetener mixture.
- Serve warm and enjoy!
Notes
Don’t overmix the dough for a tender texture. Adjust sweetness to your preference.
