- 1 cup almond flour
- 1/4 cup coconut sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon melted coconut oil
- Cooking spray
Instructions
- In a mixing bowl, combine almond flour, coconut sugar, cinnamon, baking powder, and salt.
- In another bowl, whisk together the eggs, vanilla extract, and melted coconut oil.
- Pour the wet ingredients into the dry mixture and stir until a dough forms.
- Preheat your air fryer to 350°F (175°C) and lightly spray the basket with cooking spray.
- Roll the dough into small bites, about the size of a marble, and place them in the air fryer basket in a single layer.
- Cook for 8-10 minutes, flipping halfway through for even browning.
- Once golden brown, remove them from the air fryer and, if desired, roll in a mixture of coconut sugar and cinnamon.
- Serve warm and enjoy!
