Description

A delightful, buttery pastry infused with hazelnut flavor, perfect for tarts or as a base for various sweet desserts.


Ingredients

Scale
  • 110 g butter (cold, cut into cubes)
  • 110 g sugar
  • A pinch of salt
  • 1 teaspoon vanilla extract
  • 50 g egg (about 1 egg)
  • 65 g hazelnut flour
  • 250 g all-purpose flour (Type 00)

Instructions

  1. Place the cold butter cubes in a stand mixer fitted with the paddle attachment.
  2. Add the sugar, vanilla extract, and a pinch of salt. Mix on medium speed until well combined and creamy.
  3. Add the egg and mix until fully integrated.
  4. Gradually introduce the hazelnut flour and all-purpose flour, mixing until the dough feels smooth.
  5. Roll out the dough between two sheets of parchment paper to about 3 mm thickness, then transfer to the freezer to chill.
  6. Preheat the oven and use the pastry as a base for tarts or pies.

Notes

Chill the dough before rolling for best results. Can substitute hazelnut flour with almond flour for a different flavor.
