- 110 g butter (cold, cut into cubes)
- 110 g sugar
- A pinch of salt
- 1 teaspoon vanilla extract
- 50 g egg (about 1 egg)
- 65 g hazelnut flour
- 250 g all-purpose flour (Type 00)
Instructions
- Place the cold butter cubes in a stand mixer fitted with the paddle attachment.
- Add the sugar, vanilla extract, and a pinch of salt. Mix on medium speed until well combined and creamy.
- Add the egg and mix until fully integrated.
- Gradually introduce the hazelnut flour and all-purpose flour, mixing until the dough feels smooth.
- Roll out the dough between two sheets of parchment paper to about 3 mm thickness, then transfer to the freezer to chill.
- Preheat the oven and use the pastry as a base for tarts or pies.
Notes
Chill the dough before rolling for best results. Can substitute hazelnut flour with almond flour for a different flavor.
