Description

Delicious and visually stunning Green Meringue Medallions that are airy and crispy, perfect for any occasion.


Ingredients

Scale
  • 4 large egg whites (room temperature)
  • 1/4 teaspoon lemon juice
  • 1 cup granulated sugar
  • Green gel food coloring
  • Golden sprinkles

Instructions

  1. Prepare a baking sheet by lining it with parchment paper. Preheat your oven to 200ºF.
  2. Beat the egg whites on medium speed for about two minutes.
  3. Add the lemon juice to help stabilize the meringue.
  4. Gradually increase the mixer speed to high, adding the sugar one tablespoon at a time until stiff peaks form, about 5 to 7 minutes.
  5. Fold in a small drop of green gel food coloring until achieved.
  6. Transfer the mixture to a piping bag and pipe dollops onto the baking sheet.
  7. Sprinkle some golden sprinkles on top before baking.
  8. Bake for around two hours, then let them sit in the oven for an additional 35-45 minutes to dry.
  9. Allow them to cool completely before storing.

Notes

Store in an airtight container at room temperature. Best if kept in a cool, dry place.
