Description

A refreshing twist on the classic pound cake infused with grapefruit for a delightful flavor.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup fresh grapefruit juice
  • Zest of 1 grapefruit
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  3. Crack in the eggs, one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. In a separate bowl, combine the grapefruit juice, grapefruit zest, buttermilk, and vanilla extract.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the wet ingredients, starting and finishing with the dry.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake in the preheated oven for 50-60 minutes, until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Serve with fresh whipped cream or a scoop of vanilla ice cream. Can be stored at room temperature for up to 3 days or refrigerated for a week.
