- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup fresh grapefruit juice
- Zest of 1 grapefruit
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
- Crack in the eggs, one at a time, mixing well after each addition.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate bowl, combine the grapefruit juice, grapefruit zest, buttermilk, and vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the wet ingredients, starting and finishing with the dry.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for 50-60 minutes, until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
Serve with fresh whipped cream or a scoop of vanilla ice cream. Can be stored at room temperature for up to 3 days or refrigerated for a week.
