Ingredients
Scale
- 1 pre-made pie crust (9-inch) or homemade
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1/4 cup unsalted butter, melted
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup thick cream

- 1/4 cup unsalted butter (for caramel base)
- 1 cup chopped pecans
- 1 cup semi-sweet chocolate chips
- 1/4 cup shredded sweetened coconut (optional)

Instructions
- Preheat your oven to 350°F (175°C). If using a pre-made pie crust, follow package instructions for pre-baking. For homemade, roll it out and fit into a 9-inch pie dish.
- In a saucepan, melt 1/4 cup of unsalted butter and stir in the brown sugar, light corn syrup, and salt. Cook over medium heat, stirring constantly until all sugars dissolve.
- In a mixing bowl, whisk together granulated sugar, melted butter, eggs, vanilla extract, and thick cream. Fold in the melted caramel mixture gently, then add chocolate chips and chopped pecans.
- Pour the filling into the prepared pie crust, ensuring an even spread. Sprinkle shredded coconut on top if desired.
- Bake for 40 to 45 minutes or until the center is set and slightly jiggles. Let cool for at least 30 minutes before slicing.
