Deliciously soft and chewy cookies filled with a creamy cheesecake center, perfect for the holiday season.


Ingredients

  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1/4 cup molasses
  • 2 1/4 cups all-purpose flour
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Add in the egg and molasses, mixing until combined.
  2. In a separate bowl, combine the flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt. Gradually add this mixture to the wet ingredients until you have a soft dough.
  3. In another bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
  4. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop out a tablespoon of cookie dough and flatten it slightly. Add about a teaspoon of cheesecake filling in the center. Take another tablespoon of dough, flatten it, and place it on top, sealing the edges.
  5. Place the assembled cookies on the baking sheet about two inches apart and bake for 10-12 minutes, or until the edges are lightly golden.
  6. Let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
