- 3/4 cup unsalted butter, softened
- 1 cup brown sugar
- 1 large egg
- 1/4 cup molasses
- 2 1/4 cups all-purpose flour
- 1 1/2 teaspoons ground ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon nutmeg
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Add in the egg and molasses, mixing until combined.
- In a separate bowl, combine the flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt. Gradually add this mixture to the wet ingredients until you have a soft dough.
- In another bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop out a tablespoon of cookie dough and flatten it slightly. Add about a teaspoon of cheesecake filling in the center. Take another tablespoon of dough, flatten it, and place it on top, sealing the edges.
- Place the assembled cookies on the baking sheet about two inches apart and bake for 10-12 minutes, or until the edges are lightly golden.
- Let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
