Fudgy Espresso Brownie Bites

Description

Deliciously fudgy brownie bites infused with a delightful hint of espresso, perfect for any occasion.


Ingredients

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 2 tablespoons brewed espresso or strong coffee
  • 1/2 cup semi-sweet chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small saucepan, gently melt the butter over low heat.
  3. In a large bowl, combine the melted butter and sugar, and mix until smooth. Add eggs one at a time, mixing after each, then add vanilla extract.
  4. In another bowl, whisk together cocoa powder, flour, salt, and baking powder. Add to the wet ingredients, stirring until just combined.
  5. Stir in the brewed espresso and fold in chocolate chips if using.
  6. Grease a mini muffin tin and pour batter into each cup, filling about 2/3 full.
  7. Bake for 10-12 minutes until a toothpick comes out slightly moist but not wet.
  8. Cool in the tin for a few minutes, then transfer to a wire rack to cool completely.

Notes

Serve slightly warm with a sprinkle of powdered sugar or a scoop of ice cream. Store in an airtight container for up to 3 days at room temperature or up to a week in the fridge.
