Deliciously fudgy brownie bites infused with a delightful hint of espresso, perfect for any occasion.
Ingredients

- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 2 tablespoons brewed espresso or strong coffee
- 1/2 cup semi-sweet chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a small saucepan, gently melt the butter over low heat.
- In a large bowl, combine the melted butter and sugar, and mix until smooth. Add eggs one at a time, mixing after each, then add vanilla extract.
- In another bowl, whisk together cocoa powder, flour, salt, and baking powder. Add to the wet ingredients, stirring until just combined.
- Stir in the brewed espresso and fold in chocolate chips if using.
- Grease a mini muffin tin and pour batter into each cup, filling about 2/3 full.
- Bake for 10-12 minutes until a toothpick comes out slightly moist but not wet.
- Cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
Notes
Serve slightly warm with a sprinkle of powdered sugar or a scoop of ice cream. Store in an airtight container for up to 3 days at room temperature or up to a week in the fridge.
