A guilt-free delight made from sweet potatoes, these flourless brownies are rich, fudgy, and satisfying, perfect for a wholesome dessert.

- 1 cup sweet potato (cooked and mashed, about 1 medium sweet potato)
- 2 tsp vanilla extract
- 1/2 cup pure maple syrup
- 1 + 1/2 tbsp coconut oil (melted)
- 1/4 cup peanut butter
- 1 egg
- 1/3 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp salt
- 2/3 cup oat flour
- 1/2 cup chocolate chips
- 1/2 cup walnuts (chopped)
- 1/2 cup mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine mashed sweet potato, vanilla extract, maple syrup, egg, peanut butter, and melted coconut oil. Whisk until smooth and creamy.
- In a separate bowl, mix together the dry ingredients: cocoa powder, baking powder, salt, and oat flour. Stir well.
- Gradually add the dry ingredients to the wet mixture, stirring until a smooth batter forms.
- Fold in chocolate chips, chopped walnuts, and mini marshmallows.
- Pour the batter into a prepared 8×8 baking pan. Optionally, sprinkle additional chocolate chips or marshmallows on top.
- Bake for 22-28 minutes, or until the top starts to brown. A toothpick inserted should come out clean.
- Allow the brownies to cool before slicing and serving.
Notes
These brownies can be served warm or at room temperature. They are great on their own or with ice cream, nut butter, or fresh berries.
