Description

Ingredients

  • 2 large oranges
  • 1 cup pistachios, shelled
  • 1 cup almonds, ground
  • 1 cup sugar
  • 4 large eggs
  • 1 teaspoon baking powder
  • A pinch of salt
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. Boil the whole oranges in a pot of water for about 30 minutes until soft, then allow them to cool.
  3. Chop the cooled oranges, blend into a smooth puree, and set aside.
  4. In a large mixing bowl, mix the orange puree with ground pistachios, ground almonds, sugar, eggs, baking powder, and salt until combined.
  5. Pour the batter into the prepared cake pan and smooth out the top.
  6. Bake in the preheated oven for 45 to 50 minutes, or until a skewer inserted into the center comes out clean.
  7. Cool the cake in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  8. Dust with powdered sugar before serving if desired.
