- 2 large oranges
- 1 cup pistachios, shelled
- 1 cup almonds, ground
- 1 cup sugar
- 4 large eggs
- 1 teaspoon baking powder
- A pinch of salt
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
- Boil the whole oranges in a pot of water for about 30 minutes until soft, then allow them to cool.
- Chop the cooled oranges, blend into a smooth puree, and set aside.
- In a large mixing bowl, mix the orange puree with ground pistachios, ground almonds, sugar, eggs, baking powder, and salt until combined.
- Pour the batter into the prepared cake pan and smooth out the top.
- Bake in the preheated oven for 45 to 50 minutes, or until a skewer inserted into the center comes out clean.
- Cool the cake in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Dust with powdered sugar before serving if desired.
