Indulgent yet wholesome brownies made without flour using Greek yogurt for a fudgy texture.

- 180 grams (¾ cup) Greek yogurt
- 1 egg
- 60 grams (½ cup) cocoa powder
- 80 grams (⅓ cup + 1 tbsp) granular sweetener (erythritol)
- ½ tsp coffee powder
- ⅙ tsp salt
- Optional: chocolate chips for topping
Instructions
- Preheat your oven to 180°C (350°F) and line a 15 cm x 15 cm (7 inch x 7 inch) brownie pan with parchment paper.
- In a mixing bowl, combine Greek yogurt and egg until fully blended.
- Add cocoa powder, granular sweetener, coffee powder, and salt, stirring until smooth.
- Pour the brownie batter into the prepared pan and add chocolate chips if desired.
- Bake for 22 to 30 minutes until the edges are set and the center is slightly gooey.
- Let cool completely before slicing. Store leftovers in the fridge for up to four days.
Notes
For best results, use quality ingredients and check for doneness with a toothpick. These brownies can also be frozen for up to three months.
