Description

Indulgent yet wholesome brownies made without flour using Greek yogurt for a fudgy texture.


Ingredients

  • 180 grams (¾ cup) Greek yogurt
  • 1 egg
  • 60 grams (½ cup) cocoa powder
  • 80 grams (⅓ cup + 1 tbsp) granular sweetener (erythritol)
  • ½ tsp coffee powder
  • ⅙ tsp salt
  • Optional: chocolate chips for topping

Instructions

  1. Preheat your oven to 180°C (350°F) and line a 15 cm x 15 cm (7 inch x 7 inch) brownie pan with parchment paper.
  2. In a mixing bowl, combine Greek yogurt and egg until fully blended.
  3. Add cocoa powder, granular sweetener, coffee powder, and salt, stirring until smooth.
  4. Pour the brownie batter into the prepared pan and add chocolate chips if desired.
  5. Bake for 22 to 30 minutes until the edges are set and the center is slightly gooey.
  6. Let cool completely before slicing. Store leftovers in the fridge for up to four days.

Notes

For best results, use quality ingredients and check for doneness with a toothpick. These brownies can also be frozen for up to three months.
