- 4 large egg whites
- 1 cup (200g) granulated sugar
- 1 teaspoon cornstarch
- 1 teaspoon white vinegar
- 1 teaspoon vanilla extract
- 1 cup (240ml) heavy whipping cream
- Fresh fruit (e.g., strawberries, kiwi, blueberries, passion fruit)
Instructions
- Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper. Draw a circle on the parchment, about 8 inches in diameter.
- In a large mixing bowl, beat the egg whites with a mixer on medium speed until soft peaks form (about 2-3 minutes).
- Gradually add the sugar to the egg whites, beating continuously until glossy peaks form (8-10 minutes).
- Carefully fold in the cornstarch, white vinegar, and vanilla extract.
- Shape the meringue into a circle on the parchment, creating a well in the center.
- Bake the Pavlova for 1 hour, then turn off the oven and let it cool inside.
- While cooling, beat the heavy cream until soft peaks form.
- Once cool, spread the whipped cream into the center well and top with fresh fruit.
Notes
Serve the Pavlova the same day it’s made for best texture. Garnish with fresh mint or drizzle with sauce for added flavor.
