- 8 oz Dark chocolate, chopped (about 225g)
- 1/4 cup Sugar (about 50g)
- 1 teaspoon Vanilla extract
Instructions
- Prepare the Coffee Mixture: Brew a strong cup of espresso, let it cool down to room temperature.
- Make the Mascarpone Filling: In a large mixing bowl, combine mascarpone cheese, crushed ladyfinger cookies, cooled espresso, sugar, and vanilla extract. Stir until well blended.
- Combine Ingredients for the Truffle Mixture: Cover the mixture and refrigerate for about an hour to firm up.
- Shape the Truffles: Use a cookie scoop to form small balls from the mixture, placing them on a parchment-lined baking sheet.
- Coat the Truffles: Melt dark chocolate and dip each truffle into the chocolate, letting excess drip off before placing back on the baking sheet.
- Chill the Truffles: Refrigerate coated truffles for about 30 minutes to let the chocolate set.
