  • 1/2 cup Espresso, cooled (about 120ml)
  • 1/4 cup Cocoa powder (for dusting)
  • 8 oz Dark chocolate, chopped (about 225g)
  • 1/4 cup Sugar (about 50g)
  • 1 teaspoon Vanilla extract

Instructions

  1. Prepare the Coffee Mixture: Brew a strong cup of espresso, let it cool down to room temperature.
  2. Make the Mascarpone Filling: In a large mixing bowl, combine mascarpone cheese, crushed ladyfinger cookies, cooled espresso, sugar, and vanilla extract. Stir until well blended.
  3. Combine Ingredients for the Truffle Mixture: Cover the mixture and refrigerate for about an hour to firm up.
  4. Shape the Truffles: Use a cookie scoop to form small balls from the mixture, placing them on a parchment-lined baking sheet.
  5. Coat the Truffles: Melt dark chocolate and dip each truffle into the chocolate, letting excess drip off before placing back on the baking sheet.
  6. Chill the Truffles: Refrigerate coated truffles for about 30 minutes to let the chocolate set.
