Description

A delightful and comforting Swedish Apple Cake made with tender apples, warm spices, and a rich batter, perfect for any occasion.


Ingredients

  • 3 medium apples (such as Granny Smith, Honeycrisp, or Braeburn), peeled, cored, and thinly sliced
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cardamom (optional)
  • 1/2 cup unsalted butter, melted and cooled
  • 3/4 cup granulated sugar
  • 2 large eggs, lightly beaten
  • 1 tsp vanilla extract
  • 1/2 cup plain yogurt or sour cream
  • 2 tbsp granulated sugar (for topping)
  • 1 tsp ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round or square baking pan and line it with parchment paper.
  2. Peel, core, and slice the apples thinly, then set aside.
  3. In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and cardamom.
  4. In a separate bowl, whisk together the melted butter, sugar, eggs, vanilla extract, and yogurt until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Spread half the batter evenly into the prepared pan, then arrange half of the apple slices on top.
  7. Dollop the remaining batter over the apples and spread it gently, then arrange the remaining apple slices decoratively on top.
  8. Mix the sugar and cinnamon for the topping, then sprinkle it evenly over the apples.
  9. Bake for 40–45 minutes until golden brown and a toothpick comes out clean.
  10. Let cool in the pan for 10–15 minutes before slicing. Serve warm or at room temperature.

Notes

For extra indulgence, serve with whipped cream or a scoop of vanilla ice cream.
