Ingredients
1 cup unsalted butter (browned if desired)
1 1/2 cups light brown sugar, packed
2 large eggs, room temperature
2 tsp vanilla extract
Zest of 3 lemons
1/3 cup fresh lemon juice
2 cups all-purpose flour
1/2 tsp baking powder
1/2 tsp salt
Glaze:
1 cup powdered sugar
2–3 tbsp fresh lemon juice
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
2. In a saucepan or skillet, melt the butter (brown it if desired for nutty flavor). Let cool slightly.
3. Whisk brown sugar into butter until smooth. Add eggs, vanilla, lemon zest, and lemon juice. Mix well.
4. In a separate bowl, whisk together flour, baking powder, and salt. Gradually fold into wet ingredients until just combined.
5. Pour batter into prepared pan and spread evenly.
6. Bake 25-30 minutes, or until edges are golden and center looks just set. Do not overbake.
7. Cool completely before glazing.
8. For glaze: whisk powdered sugar, lemon juice, and salt until smooth. Pour over cooled bars and spread evenly.
9. Allow glaze to set before cutting into squares.
