Description

A simple and delicious carrot cake that’s moist and packed with flavor, perfect for any occasion.


Ingredients

  • 2 cups grated carrots
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 cup chopped walnuts or pecans (optional)
  • Cream cheese frosting for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix together the grated carrots, granulated sugar, brown sugar, and vegetable oil until well combined.
  3. Add the eggs, one at a time, ensuring each egg is fully mixed in before adding the next.
  4. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  5. Gradually incorporate the dry ingredients into the wet mixture, mixing gently until just combined.
  6. If you’re using nuts, fold them into the batter at this stage.
  7. Divide the batter evenly between the prepared cake pans.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  10. Once cool, frost the cakes with your lovely cream cheese frosting as desired.
  11. Slice and serve to your eager guests!
