- 2 cups grated carrots
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1 cup chopped walnuts or pecans (optional)
- Cream cheese frosting for topping
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, mix together the grated carrots, granulated sugar, brown sugar, and vegetable oil until well combined.
- Add the eggs, one at a time, ensuring each egg is fully mixed in before adding the next.
- In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
- Gradually incorporate the dry ingredients into the wet mixture, mixing gently until just combined.
- If you’re using nuts, fold them into the batter at this stage.
- Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
- Once cool, frost the cakes with your lovely cream cheese frosting as desired.
- Slice and serve to your eager guests!
