Description

Blueberry Layer:

3 cups fresh or frozen blueberries

3/4 cup granulated sugar

2 tablespoons cornstarch

1/4 cup water

Top Layer:

1 cup whipped topping

Optional garnishes: fresh blueberries, lemon zest, or shaved white chocolate


Instructions

1. Make the Crust: Mix graham cracker crumbs with melted butter. Press into the bottom of a lined baking dish and chill.

2. Prepare Cream Cheese Layer: Beat cream cheese until smooth. Add powdered sugar and vanilla, fold in half the whipped topping. Spread evenly over chilled crust.

3. Cook Blueberry Topping: In a saucepan, combine blueberries, sugar, cornstarch, and water. Cook over medium heat until thick and glossy. Cool slightly and spread over cream cheese layer.

4. Top with Whipped Topping: Spread remaining whipped topping over blueberry layer. Garnish with fresh blueberries or lemon zest if desired.

5. Chill & Serve: Refrigerate for at least 2–3 hours (overnight is best). Slice into squares and serve cold.
