- 2 tablespoons Almond Butter (or sunflower seed butter for a nut-free option)
- 1 tablespoon Coconut Oil (melted)
- 1 cup Chocolate Chips (or chocolate bar; for a richer flavor, use dark chocolate)
Instructions
- Prepare your dates: Start by ensuring your Medjool dates are pitted and soft. If they feel a bit dry, soak them in warm water for about 10 minutes and then drain them.
- Blend the base: In a food processor, combine the pitted dates, almond butter, and melted coconut oil. Blend until the mixture is completely smooth and creamy.
- Shape the caramels: Scoop out the mixture and press it into a small square or rectangular pan lined with parchment paper. Use a spatula to flatten the top.
- Chill: Place the pan in the refrigerator for about an hour to allow the caramels to firm up.
- Coat with chocolate: Once set, melt the chocolate chips or chocolate bar, dip each piece, and let excess drip off.
- Let it cool: Place the chocolate-coated caramels back in the refrigerator until the chocolate is fully hard.
Notes
For extra flavor, consider sprinkling sea salt on top of the chocolate coating.
