Description

A fresh and zesty twist on the classic dessert, combining creamy mascarpone with lemon and coffee-soaked ladyfingers.


Ingredients

  • 8 ounces mascarpone cheese
  • 1 cup heavy cream
  • 3/4 cup powdered sugar
  • 1/2 cup lemon juice
  • 1 teaspoon lemon zest
  • 1 cup strong brewed coffee, cooled
  • 1216 ladyfinger cookies
  • A pinch of salt

Instructions

  1. In a bowl, whisk together the mascarpone cheese, heavy cream, powdered sugar, lemon juice, and lemon zest until smooth and creamy.
  2. In a separate bowl, brew the coffee and let it cool.
  3. Dip each ladyfinger into the coffee quickly, ensuring they don’t get too soggy.
  4. Layer half of the dipped ladyfingers in the bottom of a serving dish.
  5. Spread half of the mascarpone mixture over the ladyfingers.
  6. Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
  7. Refrigerate for at least 240 minutes or overnight to allow the flavors to meld.
  8. Serve chilled, garnished with extra lemon zest if desired.
