A visually stunning and delicious Purple Three Milks Cake infused with ube flavors and soaked in a rich milks mixture.

- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup ube puree
- 1/2 cup milk
- 1 can (12 oz) evaporated milk
- 1 can (14 oz) sweetened condensed milk
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- Additional ube for topping (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a bowl, combine the flour, baking powder, and salt. Set aside.
- In a large bowl, beat the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the ube puree, alternating with the mixed dry ingredients and the milk until just combined.
- Pour the batter into the prepared baking pan and smooth the top. Bake for 30-35 minutes or until a toothpick comes out clean.
- Allow the cake to cool completely.
- In a separate bowl, combine the evaporated milk, sweetened condensed milk, and vanilla extract.
- Poke holes all over the top of the cooled cake and pour the milks mixture over it. Let it soak for at least 2 hours or overnight.
- Whip the heavy cream and spread over the top of the cake; garnish with additional ube if desired.
Notes
Serve chilled for the best flavor. Can be stored in an airtight container in the fridge for 3-5 days.
