Description

A visually stunning and delicious Purple Three Milks Cake infused with ube flavors and soaked in a rich milks mixture.


Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup ube puree
  • 1/2 cup milk
  • 1 can (12 oz) evaporated milk
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Additional ube for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a bowl, combine the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the ube puree, alternating with the mixed dry ingredients and the milk until just combined.
  6. Pour the batter into the prepared baking pan and smooth the top. Bake for 30-35 minutes or until a toothpick comes out clean.
  7. Allow the cake to cool completely.
  8. In a separate bowl, combine the evaporated milk, sweetened condensed milk, and vanilla extract.
  9. Poke holes all over the top of the cooled cake and pour the milks mixture over it. Let it soak for at least 2 hours or overnight.
  10. Whip the heavy cream and spread over the top of the cake; garnish with additional ube if desired.

Notes

Serve chilled for the best flavor. Can be stored in an airtight container in the fridge for 3-5 days.
