Description

Delightful Red Velvet Cake Pops with a rich red hue and creamy cream cheese frosting, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cocoa powder
  • 1 ½ cups vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 16 oz dark chocolate or candy melts
  • Sprinkles or edible glitter (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a 9×13-inch baking pan by greasing it and lining it with parchment paper.
  2. In a large bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder.
  3. In another bowl, whisk together the vegetable oil, buttermilk, eggs, food coloring, vanilla extract, and white vinegar until well-blended.
  4. Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean. Allow to cool completely.
  6. In a mixing bowl, beat together the cream cheese and butter until creamy. Gradually add in the powdered sugar and vanilla extract until smooth.
  7. Crumble the cooled cake into a large bowl and mix with the cream cheese frosting until well combined.
  8. Roll the mixture into small balls, about 1 inch in diameter, and place them on a lined baking sheet.
  9. Insert sticks into each ball and refrigerate for about 30 minutes.
  10. In a microwave-safe bowl, melt the dark chocolate or candy melts, stirring every 30 seconds until smooth.
  11. Dip each cake pop into the melted chocolate, tapping off excess chocolate, and add sprinkles if desired. Allow to harden before serving.

Notes

Store in an airtight container for up to a week. Can freeze well; thaw in the fridge before serving.
