Description

Delight in the soft, sweet Italian buns filled with creamy goodness, perfect for breakfast or as a treat.


Ingredients

Scale
  • 60 g (1/4 cup) milk, heated to 110°F
  • 25 g (2 tbsp) granulated sugar
  • 6 g (2 tsp) instant yeast
  • 3 large eggs
  • 1 tsp salt
  • 360 g (3 cups) all-purpose flour
  • 113 g (1/2 cup) unsalted butter, softened and cubed
  • 1 egg (for egg wash)
  • 15 g (1 tbsp) heavy cream or milk (for egg wash)
  • 240 g (1 cup) heavy cream
  • 30 g (1/4 cup) confectioners’ sugar
  • 1/2 tsp vanilla extract

Instructions

  1. In a small bowl, combine the warm milk and sugar. Sprinkle the yeast over the milk and let it sit for about 5-10 minutes until it becomes frothy.
  2. In a large bowl, whisk together the eggs and salt. Add the yeast mixture and mix well. Gradually add the flour, mixing until combined.
  3. Add the softened butter and knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm spot for 1-2 hours or until it doubles in size.
  5. Punch down the dough and divide it into 10 portions. Shape each piece into a ball and place them on a baking sheet lined with parchment paper.
  6. Cover the buns with the cloth and let them rise again for about 30-45 minutes.
  7. Preheat your oven to 350°F (175°C).
  8. Whisk together the egg and heavy cream or milk for the egg wash. Brush the tops of the buns before baking.
  9. Bake the maritozzi for 20-25 minutes, or until golden brown.
  10. Remove from the oven and let them cool on a wire rack.
  11. In a bowl, whip the heavy cream, adding confectioners’ sugar and vanilla extract until soft peaks form.
  12. Once the buns are cool, cut a slit on the top and fill them generously with whipped cream.

Notes

Dust with confectioners’ sugar or serve with fresh berries or chocolate sauce for added flavor.
