Ingredients

- 60 g (1/4 cup) milk, heated to 110°F
- 25 g (2 tbsp) granulated sugar
- 6 g (2 tsp) instant yeast
- 3 large eggs
- 1 tsp salt
- 360 g (3 cups) all-purpose flour
- 113 g (1/2 cup) unsalted butter, softened and cubed
- 1 egg (for egg wash)
- 15 g (1 tbsp) heavy cream or milk (for egg wash)
- 240 g (1 cup) heavy cream
- 30 g (1/4 cup) confectioners’ sugar
- 1/2 tsp vanilla extract
Instructions
- In a small bowl, combine the warm milk and sugar. Sprinkle the yeast over the milk and let it sit for about 5-10 minutes until it becomes frothy.
- In a large bowl, whisk together the eggs and salt. Add the yeast mixture and mix well. Gradually add the flour, mixing until combined.
- Add the softened butter and knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm spot for 1-2 hours or until it doubles in size.
- Punch down the dough and divide it into 10 portions. Shape each piece into a ball and place them on a baking sheet lined with parchment paper.
- Cover the buns with the cloth and let them rise again for about 30-45 minutes.
- Preheat your oven to 350°F (175°C).
- Whisk together the egg and heavy cream or milk for the egg wash. Brush the tops of the buns before baking.
- Bake the maritozzi for 20-25 minutes, or until golden brown.
- Remove from the oven and let them cool on a wire rack.
- In a bowl, whip the heavy cream, adding confectioners’ sugar and vanilla extract until soft peaks form.
- Once the buns are cool, cut a slit on the top and fill them generously with whipped cream.
Notes
Dust with confectioners’ sugar or serve with fresh berries or chocolate sauce for added flavor.
