- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup unsweetened applesauce
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease lightly.
- In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In a separate bowl, mix applesauce, vegetable oil, egg, and vanilla extract until well combined.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Fill each muffin cup about 2/3 full with the batter.
- Bake for 15 to 20 minutes, or until a toothpick inserted in the center comes out clean.
- Allow muffins to cool in the tin for 5 minutes before transferring to a wire rack.
