- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 4 large eggs
- 1 cup heavy cream
- 1/2 cup powdered sugar

- 1 cup dark chocolate chips

Instructions
- Preheat the Oven: Start by preheating your oven to 400°F (200°C).
- Prepare the Choux Pastry: In a medium-sized saucepan, combine the water and butter. Bring this mixture to a boil over medium heat, then add the flour and stir until a dough forms.
- Add the Eggs: Remove from heat and stir in the eggs one at a time until smooth and glossy.
- Pipe the Eclairs: On a lined baking sheet, use a piping bag to form strips of dough, about 4 inches long.
- Bake: Bake in the preheated oven for about 25 minutes, or until golden brown.
- Cool Down: Let the baked eclairs cool on a wire rack.
- Whip the Cream: Beat heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Fill the Eclairs: Poke holes in each end of the cooled eclair and fill with whipped cream.
- Prepare the Chocolate Ganache: Melt dark chocolate chips with coconut oil until smooth.
- Coat the Eclairs: Drizzle or dip filled eclairs in chocolate ganache.
