Description

A delightful blend of tart Granny Smith apples and sourdough discard, topped with a flaky biscuit layer for a comforting dessert.


Ingredients

  • 4 large Granny Smith apples, peeled and chopped
  • 3/4 cup pure maple syrup
  • 3 tsp ground cinnamon
  • Pinch of allspice
  • Pinch of cloves
  • 1 tbsp lemon juice
  • 1 1/2 cup all-purpose flour
  • 1 cup sourdough discard
  • Pinch of cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup butter, cold
  • 1/4 cup brown sugar
  • 1/4 cup milk or heavy cream
  • Pinch of salt
  • 2 tbsp melted butter
  • Cinnamon and sugar for sprinkling

Instructions

  1. Preheat your oven to 375°F.
  2. In a large bowl, toss chopped apples with maple syrup, ground cinnamon, allspice, cloves, and lemon juice.
  3. In another bowl, mix flour, sourdough discard, pinch of cinnamon, baking powder, baking soda, and salt.
  4. Cut in cold butter until it resembles coarse crumbs.
  5. Add brown sugar and milk, mixing until just combined.
  6. Spread apple filling in a greased dish and spoon the biscuit topping over the apples.
  7. Drizzle with melted butter and sprinkle with cinnamon and sugar.
  8. Bake for 30 to 35 minutes until the topping is golden brown and apples are bubbling.

Notes

Let the cobbler sit for a few minutes after baking to allow the juices to settle. Serve warm with ice cream or whipped cream for a delightful treat.
