- 1 cup unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter (softened) for frosting
- 4 cups powdered sugar
- 1/4 cup unsweetened cocoa powder for frosting
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract for frosting
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a 15×10 inch jelly roll pan with parchment paper.
- In a saucepan, melt the butter over low heat. Once melted, remove from heat and stir in the sugar, eggs, and vanilla until well combined.
- In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add this dry mixture to the wet ingredients and mix until just combined.
- Pour the batter into the prepared jelly roll pan, spreading it evenly.
- Bake for about 20 minutes, or until a toothpick inserted into the center comes out clean.
- While the brownie is baking, prepare a clean kitchen towel by sprinkling it with powdered sugar.
- Once the brownies are done, let them cool in the pan for 5 minutes, then invert onto the prepared towel. Gently peel off the parchment paper.
- Roll the brownie tightly in the towel, starting from the short end, and let it cool completely in the towel.
- Meanwhile, prepare the frosting by beating the softened butter until creamy, then gradually adding the powdered sugar, cocoa powder, heavy cream, and vanilla extract. Mix until fluffy and smooth.
- Unroll the cooled brownie and spread a generous layer of frosting over the surface. Roll it back up without the towel.
- Place the log on a serving platter seam side down, frost the outside, and create a bark-like texture with a fork.
- Dust with powdered sugar and decorate as desired.
Notes
Serve with a drizzle of chocolate sauce or whipped cream. Can be customized with peppermint or nuts.
