Description

A rich and indulgent brownie roll filled with creamy frosting, perfect for holiday celebrations.


Ingredients

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter (softened) for frosting
  • 4 cups powdered sugar
  • 1/4 cup unsweetened cocoa powder for frosting
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract for frosting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 15×10 inch jelly roll pan with parchment paper.
  2. In a saucepan, melt the butter over low heat. Once melted, remove from heat and stir in the sugar, eggs, and vanilla until well combined.
  3. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add this dry mixture to the wet ingredients and mix until just combined.
  4. Pour the batter into the prepared jelly roll pan, spreading it evenly.
  5. Bake for about 20 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the brownie is baking, prepare a clean kitchen towel by sprinkling it with powdered sugar.
  7. Once the brownies are done, let them cool in the pan for 5 minutes, then invert onto the prepared towel. Gently peel off the parchment paper.
  8. Roll the brownie tightly in the towel, starting from the short end, and let it cool completely in the towel.
  9. Meanwhile, prepare the frosting by beating the softened butter until creamy, then gradually adding the powdered sugar, cocoa powder, heavy cream, and vanilla extract. Mix until fluffy and smooth.
  10. Unroll the cooled brownie and spread a generous layer of frosting over the surface. Roll it back up without the towel.
  11. Place the log on a serving platter seam side down, frost the outside, and create a bark-like texture with a fork.
  12. Dust with powdered sugar and decorate as desired.

Notes

Serve with a drizzle of chocolate sauce or whipped cream. Can be customized with peppermint or nuts.
