Description
Delicious and wholesome Date Caramels made with medjool dates and almond butter, dipped in chocolate for a sweet treat.

- 15 medjool dates
- 1/3 cup almond butter
- 3 tbsp coconut oil
- 1/2 tsp vanilla beans or extract
- Bourbon (optional)
- 1/4 tsp sea salt
- 12 oz chocolate chips
Instructions
- Start by placing the pitted medjool dates in a bowl and covering them with boiling water. Allow them to soak for about 10 minutes.
- After soaking, squeeze out any excess water from the dates and transfer them into a food processor.
- Add the almond butter, coconut oil, vanilla beans, bourbon, and sea salt to the processor. Blend everything until it’s completely smooth and creamy.
- Line a loaf pan with parchment paper and spread the caramel mixture evenly into the pan. Freeze for about 3 to 4 hours until firm.
- Once set, melt the chocolate using low heat, stirring gently until smooth.
- Cut the caramels into squares and dip each piece into the melted chocolate.
- For that finishing touch, sprinkle a tiny bit of sea salt on top. Enjoy every bite!

Store in an airtight container in the refrigerator for up to 2 weeks or in the freezer for up to 2 months.
