Description

Ingredients

  • 1 1/2 cups boiling water
  • 1 teaspoon baking soda
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a bowl, combine the chopped dates with boiling water. Stir in the baking soda and set aside to cool.
  3. In a separate bowl, cream together the softened butter and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually mix the dry ingredients into the wet mixture until just combined.
  7. Fold in the date mixture, ensuring everything is well incorporated.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack.
