- 1/2 cup butter (softened)
- 1/3 cup vegetable or canola oil
- 1/2 cup granulated sugar
- 1/4 cup powdered sugar
- 1 egg (at room temperature)
- 1 tsp vanilla extract
- 2 1/3 cup flour
- 1/4 tsp salt
- 1 tsp baking powder
- 5 tbsp butter (for filling)
- 2/3 cup brown sugar
- 1 1/4 cup chopped pecans
- 1 tsp vanilla extract (for filling)
- 1/3 cup heavy cream
- 1/4 tsp cinnamon
- 1 pinch nutmeg
- 1 pinch salt (for filling)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter, vegetable oil, granulated sugar, and powdered sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until combined and smooth.
- In a separate bowl, whisk together flour, salt, and baking powder. Gradually add this to the wet mixture, mixing until fully combined.
- Scoop out about nine cookie balls and place them on the prepared baking sheet, flattening them to about one inch thick.
- Use a 1/4 measuring cup to press down the center of each cookie to create a well for the pecan pie filling.
- Bake for 8-9 minutes or until the edges are golden brown. Allow to cool on the baking sheet.
- For the filling, melt the butter in a saucepan over medium heat, then stir in brown sugar, chopped pecans, vanilla extract, heavy cream, cinnamon, nutmeg, and a pinch of salt until smooth.
- Once the cookies are cool, fill the wells with the warm pecan pie filling and let sit before serving.
