  • 1 cup fresh cranberries, chopped
  • 1/2 cup orange juice
  • 1 tablespoon orange zest
  • 2 large eggs

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, cream the softened butter and granulated sugar until light and fluffy, about 3 to 5 minutes.
  3. Beat in the eggs one at a time, then stir in the orange juice, orange zest, and vanilla extract until smooth.
  4. In another bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Gradually add the dry mixture to the creamed mixture, mixing until just combined.
  5. Fold in the chopped cranberries gently.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool for several minutes in the pan before transferring it to a wire rack to cool completely.
