Description

A creamy, indulgent, and surprisingly healthy dessert, packed with protein and naturally sweetened.


Ingredients

Scale
  • 1 cup full-fat cottage cheese
  • 4 tbsp creamy natural peanut butter, sugar-free
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt (optional)
  • 12 tbsp milk (if needed)

Instructions

  1. Strain 1 cup of cottage cheese for about 1–2 minutes to remove excess liquid.
  2. Set up a clean 4-cup food processor or blender.
  3. Add the strained cottage cheese, peanut butter, sweetener, vanilla extract, and salt to the processor.
  4. Blend the mixture for 45–60 seconds until smooth and creamy, scraping the sides halfway.
  5. If too thick, gradually blend in milk until desired consistency is reached.
  6. Transfer the mixture to a bowl, cover, and chill in the fridge for 15–20 minutes to set.
  7. Scoop the mousse into 2–4 small bowls or jars, about 1/4 to 1/2 cup per serving.
  8. Serve chilled with optional toppings like fresh fruit or granola.

Notes

Store leftovers in the refrigerator for 3-4 days in an airtight container.
