- 1 cup full-fat cottage cheese
- 4 tbsp creamy natural peanut butter, sugar-free
- 2 tbsp honey or maple syrup
- 1 tsp vanilla extract
- 1/4 tsp salt (optional)
- 1–2 tbsp milk (if needed)
Instructions
- Strain 1 cup of cottage cheese for about 1–2 minutes to remove excess liquid.
- Set up a clean 4-cup food processor or blender.
- Add the strained cottage cheese, peanut butter, sweetener, vanilla extract, and salt to the processor.
- Blend the mixture for 45–60 seconds until smooth and creamy, scraping the sides halfway.
- If too thick, gradually blend in milk until desired consistency is reached.
- Transfer the mixture to a bowl, cover, and chill in the fridge for 15–20 minutes to set.
- Scoop the mousse into 2–4 small bowls or jars, about 1/4 to 1/2 cup per serving.
- Serve chilled with optional toppings like fresh fruit or granola.

Store leftovers in the refrigerator for 3-4 days in an airtight container.
