Instructions
- Blend the cottage cheese, maple syrup, lemon juice, lemon zest, and vanilla extract in a blender until smooth and creamy.
- Taste the mixture and adjust sweetness with more maple syrup if desired, then blend again.
- Scoop the blended mousse into serving bowls or glasses, cover, and refrigerate for at least 30 minutes.
- Serve chilled, optionally topped with whipped cream.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. The texture may change slightly, but the flavor will remain delicious. Can also be enjoyed frozen like a popsicle.
