Description

A healthy dessert delight packed with protein and the natural sweetness of carrots.


Ingredients

Scale
  • 1 cup cottage cheese
  • 2 large eggs
  • ½ cup almond flour (or oat flour)
  • ½ cup grated carrot
  • 23 tbsp maple syrup or honey (optional)
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • ¼ tsp cinnamon
  • Pinch of salt
  • Optional: 2–3 tbsp chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350 °F (175 °C). Line an 8×8-inch baking dish with parchment paper or lightly grease it.
  2. In a large bowl, whisk together the cottage cheese, eggs, maple syrup (if using), and vanilla until the mixture is nice and smooth.
  3. Add in the almond or oat flour, baking powder, cinnamon, salt, and grated carrot. Stir until everything is combined.
  4. If you’re using nuts, fold them in gently at this stage.
  5. Pour the batter into your prepared baking dish and smooth the top with a spatula.
  6. Bake for 25–30 minutes, or until the surface is set and a toothpick comes out mostly clean.
  7. Allow the bars to cool for at least 10 minutes before slicing into 9 bars. Enjoy!

Notes

Store leftovers in an airtight container for up to a week in the fridge, or freeze for up to three months.
