A healthy dessert delight packed with protein and the natural sweetness of carrots.
Ingredients

- 1 cup cottage cheese
- 2 large eggs
- ½ cup almond flour (or oat flour)
- ½ cup grated carrot
- 2–3 tbsp maple syrup or honey (optional)
- 1 tsp vanilla extract
- ½ tsp baking powder
- ¼ tsp cinnamon
- Pinch of salt
- Optional: 2–3 tbsp chopped walnuts or pecans
Instructions
- Preheat your oven to 350 °F (175 °C). Line an 8×8-inch baking dish with parchment paper or lightly grease it.
- In a large bowl, whisk together the cottage cheese, eggs, maple syrup (if using), and vanilla until the mixture is nice and smooth.
- Add in the almond or oat flour, baking powder, cinnamon, salt, and grated carrot. Stir until everything is combined.
- If you’re using nuts, fold them in gently at this stage.
- Pour the batter into your prepared baking dish and smooth the top with a spatula.
- Bake for 25–30 minutes, or until the surface is set and a toothpick comes out mostly clean.
- Allow the bars to cool for at least 10 minutes before slicing into 9 bars. Enjoy!
Notes
Store leftovers in an airtight container for up to a week in the fridge, or freeze for up to three months.
