Description

Deliciously fudgy brownies made healthier with cottage cheese, sweetened with honey or maple syrup.


Ingredients

Scale
  • 1 cup cottage cheese
  • 1/2 cup cocoa powder
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup almond flour or whole wheat flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a blender, combine cottage cheese, cocoa powder, honey or maple syrup, melted coconut oil, eggs, and vanilla extract. Blend until smooth.
  3. In a mixing bowl, whisk together almond flour, baking powder, and salt.
  4. Mix the wet ingredients into the dry ingredients until well combined. Fold in chocolate chips if using.
  5. Pour the mixture into the prepared baking dish and spread evenly. Bake for 25-30 minutes or until a toothpick comes out clean.
  6. Let cool before cutting into squares and enjoy.

Notes

Serve warm with vanilla ice cream, powdered sugar or a drizzle of chocolate. Store in an airtight container for up to 3 days at room temperature or 1 week in the fridge.
