Deliciously fudgy brownies made healthier with cottage cheese, sweetened with honey or maple syrup.
Ingredients

- 1 cup cottage cheese
- 1/2 cup cocoa powder
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup almond flour or whole wheat flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
- In a blender, combine cottage cheese, cocoa powder, honey or maple syrup, melted coconut oil, eggs, and vanilla extract. Blend until smooth.
- In a mixing bowl, whisk together almond flour, baking powder, and salt.
- Mix the wet ingredients into the dry ingredients until well combined. Fold in chocolate chips if using.
- Pour the mixture into the prepared baking dish and spread evenly. Bake for 25-30 minutes or until a toothpick comes out clean.
- Let cool before cutting into squares and enjoy.
Notes
Serve warm with vanilla ice cream, powdered sugar or a drizzle of chocolate. Store in an airtight container for up to 3 days at room temperature or 1 week in the fridge.
