- 1 can coconut milk
- 1 cup shredded coconut
- 1 cup sugar
- 4 eggs
- 1 teaspoon vanilla extract
- 1 cup milk
- 1/2 cup water (for the water bath)
Instructions
- Preheat your oven to 350°F (175°C).
- In a blender, combine the coconut milk, shredded coconut, sugar, eggs, vanilla extract, and regular milk. Blend until smooth and creamy.
- Pour the mixture into a flan mold or a baking dish.
- Place the flan mold in a larger baking dish and fill the larger dish with water to create a water bath.
- Bake for about 45-50 minutes or until set and a knife inserted comes out clean.
- Allow the flan to cool, then refrigerate for a few hours before serving.
- Gently invert the flan onto a plate to serve.
Notes
Best served with fresh fruit, caramel drizzle, whipped cream, or toasted coconut flakes.
