Description

A creamy, coconut-infused dessert that will impress everyone at your gathering.


Ingredients

Scale
  • 1 can coconut milk
  • 1 cup shredded coconut
  • 1 cup sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 1/2 cup water (for the water bath)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a blender, combine the coconut milk, shredded coconut, sugar, eggs, vanilla extract, and regular milk. Blend until smooth and creamy.
  3. Pour the mixture into a flan mold or a baking dish.
  4. Place the flan mold in a larger baking dish and fill the larger dish with water to create a water bath.
  5. Bake for about 45-50 minutes or until set and a knife inserted comes out clean.
  6. Allow the flan to cool, then refrigerate for a few hours before serving.
  7. Gently invert the flan onto a plate to serve.

Notes

Best served with fresh fruit, caramel drizzle, whipped cream, or toasted coconut flakes.
