- 2 cups unsweetened shredded coconut (plus extra for rolling)
- 1/2 cup sweetened condensed milk or cream cheese (for binding)
- 1 teaspoon pure vanilla extract
- Optional: 1/4 cup powdered sugar (for extra sweetness)
- Optional: melted chocolate for dipping
- Optional: chopped nuts or seeds for coating or filling
Instructions
- In a large mixing bowl, combine the shredded coconut, your binding base (either sweetened condensed milk or cream cheese), and the vanilla extract. Stir until it forms a sticky dough.
- Scoop some mixture out and roll it between your palms to create 1-inch balls, placing each on a tray lined with parchment paper.
- Roll each ball in extra shredded coconut, cocoa powder, or chopped nuts. Optionally dip in melted chocolate and let set on parchment paper.
- Chill truffles in the refrigerator for 30–60 minutes, or freeze for 15–20 minutes until firm.
- Enjoy chilled or at room temperature. Store in an airtight container in the fridge for up to 7 days or in the freezer for up to 3 months.
Notes
Make sure the dough sticks together well. Adjust binder and coconut as needed. Feel free to experiment with coatings and flavors.
