Description

Delicious and festive cupcakes combining rich chocolate and tropical coconut flavors, perfect for holiday celebrations.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut milk
  • Shredded coconut (for topping)
  • Chocolate frosting (for topping)
  • Festive decorations (e.g., holiday-themed candies)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a bowl, mix together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. Cream the softened butter and granulated sugar together until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the coconut milk. Mix until just combined.
  6. Fill each cupcake liner about two-thirds full with the batter.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool completely before frosting with chocolate frosting, sprinkling shredded coconut on top, and adding decorations.
