Description

A warm and cozy dessert featuring a rich toffee sauce and moist sponge, perfect for any occasion.


Ingredients

  • 1 cup Medjool dates (pitted and chopped)
  • 2 cups water
  • 1/2 cup unsalted butter (softened)
  • 1 cup dark brown sugar
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup heavy cream
  • 1/2 cup dark brown sugar
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an eight-inch square baking dish.
  2. Simmer the chopped Medjool dates in water for about five minutes until soft, then mash.
  3. Cream the softened butter with the dark brown sugar until fluffy.
  4. Add the eggs, one at a time, mixing well after each addition.
  5. Mix in the flour and baking powder until just combined, then fold in the mashed date mixture.
  6. Pour the batter into the prepared dish and bake for approximately 35 minutes until golden brown.
  7. For the toffee sauce, warm the cream, dark brown sugar, butter, and vanilla extract in a saucepan until melted and bubbling.
  8. Serve the pudding warm, drizzled with the toffee sauce.

Notes

Serve with vanilla ice cream or whipped cream for an extra indulgent treat.
