Description

A moist and fluffy coffee cake with crunchy cinnamon-sugar streusel, perfect for breakfast or brunch gatherings.


Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup sour cream, at room temperature
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup light brown sugar, packed
  • 1 cup all-purpose flour (for streusel)
  • 1/2 cup unsalted butter, melted (for streusel)
  • 1 tablespoon ground cinnamon
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk or cream (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy (about 3 to 4 minutes).
  4. Beat in the eggs one at a time, followed by vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with sour cream. Mix until just combined.
  6. In a separate bowl, mix together brown sugar, flour, and cinnamon for the streusel. Stir in melted butter and walnuts until crumbly.
  7. Spread half of the cake batter into the prepared pan, sprinkle half of the streusel topping, and repeat with the remaining batter and streusel.
  8. Bake for 35 to 40 minutes or until a toothpick comes out clean.
  9. Cool in the pan on a wire rack.
  10. If desired, mix powdered sugar, milk, and vanilla for the glaze and drizzle over the cooled cake before slicing.

Notes

For a twist, add fresh berries or chocolate chips to the batter. Can be served warm or at room temperature.
