Description

An indulgent twist on classic banana bread featuring crunchy bits of Cinnamon Toast Crunch cereal, perfect for breakfast or a sweet snack.


Ingredients

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup Cinnamon Toast Crunch cereal, crushed (plus more for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set it aside.
  2. Mash the ripe bananas with a fork until smooth. Stir in the melted butter.
  3. Add the baking soda and salt, mixing well. Then stir in the sugar, beaten egg, and vanilla extract until fully combined.
  4. Gradually add the flour, mixing until just incorporated. Be careful not to overmix!
  5. Fold in the crushed Cinnamon Toast Crunch cereal gently, reserving some for the topping.
  6. Pour the batter into the prepared loaf pan and sprinkle the remaining cereal on top for added crunch.
  7. Bake in the preheated oven for about 60-65 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
