- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup Cinnamon Toast Crunch cereal, crushed (plus more for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set it aside.
- Mash the ripe bananas with a fork until smooth. Stir in the melted butter.
- Add the baking soda and salt, mixing well. Then stir in the sugar, beaten egg, and vanilla extract until fully combined.
- Gradually add the flour, mixing until just incorporated. Be careful not to overmix!
- Fold in the crushed Cinnamon Toast Crunch cereal gently, reserving some for the topping.
- Pour the batter into the prepared loaf pan and sprinkle the remaining cereal on top for added crunch.
- Bake in the preheated oven for about 60-65 minutes or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For extra flavor, consider adding nutmeg or chocolate chips. Store in an airtight container for up to 3 days, or freeze for longer storage.
