Description

A cozy and delicious gluten-free bread infused with the rich flavors of eggnog and cinnamon, perfect for breakfast or an afternoon treat.


Ingredients

  • 2 cups gluten-free all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup eggnog
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together gluten-free flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream together sugar and softened butter until light and fluffy.
  4. Beat in eggs one at a time, then stir in eggnog and vanilla extract.
  5. Gradually add dry ingredients to the wet mixture, mixing until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50 to 60 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For a dairy-free version, substitute butter with coconut oil and use almond milk eggnog. Store in an airtight container for up to 4 days, or freeze for up to 3 months.
