- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup eggnog
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a medium bowl, whisk together gluten-free flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a large bowl, cream together sugar and softened butter until light and fluffy.
- Beat in eggs one at a time, then stir in eggnog and vanilla extract.
- Gradually add dry ingredients to the wet mixture, mixing until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50 to 60 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For a dairy-free version, substitute butter with coconut oil and use almond milk eggnog. Store in an airtight container for up to 4 days, or freeze for up to 3 months.
