Description

Delightful blondies infused with warm spices and sweet caramelized apples, topped with creamy frosting.


Ingredients

  • 1 cup browned butter
  • 1 2/3 cup brown sugar
  • 2 eggs
  • 1 1/2 tsp vanilla extract
  • 2 1/3 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 cups peeled and chopped apples
  • 1 tbsp butter (for sautéing apples)
  • 1/4 tsp ground cinnamon (for apples)
  • 6 oz cream cheese (at room temperature)
  • 1/2 stick butter (at room temperature)
  • 3/4 cup powdered sugar
  • 1/2 tsp ground cinnamon (for frosting)
  • 3 tbsp maple syrup

Instructions

  1. Brown the butter in a saucepan over medium heat for 5-7 minutes until golden brown and nutty. Set aside to cool.
  2. Sauté the peeled and chopped apples in 1 tbsp of butter with 1/4 tsp cinnamon for about 10 minutes until tender. Set aside to cool.
  3. In a mixing bowl, whisk together the cooled browned butter and brown sugar until combined. Add the eggs and vanilla extract, mixing until smooth.
  4. In a separate bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg. Gradually mix the dry ingredients into the wet ingredients until just combined. Gently fold in the cooled apples.
  5. Preheat the oven to 350°F (175°C). Line an 8×8 or 9×9-inch baking pan with parchment paper.
  6. Spread the batter evenly in the pan and bake for 35-45 minutes or until a toothpick comes out clean. Allow to cool in the pan on a wire rack.
  7. Make the frosting by beating the cream cheese and butter until fluffy. Gradually add the powdered sugar, cinnamon, and maple syrup until well combined.
  8. Once the blondies are cool, spread the frosting evenly on top. Cut into squares and serve.

Notes

Serve with ice cream or coffee. Store in an airtight container for up to 4 days.
