- 1/2 cup cocoa powder
- 1/4 cup almond flour
- 1/4 cup shredded coconut
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Combine the Medjool dates, cocoa powder, almond flour, shredded coconut, vanilla extract, and salt in a food processor.
- Pulse until the mixture is well-combined and forms a sticky dough.
- Scoop out small amounts of the mixture and roll them into balls.
- Roll the truffles in additional cocoa powder or shredded coconut for decoration, if desired.
- Chill the truffles on a plate in the refrigerator for at least 30 minutes before serving.
